Chicken Parmesan
Serves 4
- 2 tablespoons unsalted butter, softened
- 4 boneless, skinless chicken breasts
- 1 (32-ounce) jar Marinara sauce (or spagetti sauce)
- 6 ounces sliced mushrooms
- 1 tablespoon italian seasoning
- salt
- pepper
- 1 1/2 cups grated mozzarella cheese
- preheat oven to 350 degrees
- grease bottom of baking dish with butter
- lay the chicken breasts in a single layer on the bottom of the dish
- pour sauce over the chicken
- scatter sliced mushrooms over the sauce
- sprinkle with italian seasoning
- sprinkle with salt and pepper
- place 1/4 of the cheese on each chicken breast
- cover with a lid or foil
- bake for 30 to 40 minutes
- remove cover and let brown for 5-10 minutes
